Recipe of the month | Banana and Choc Chip Muffins

If you have some bananas lying in the fruit bowl getting soft – do not throw them away! Try using them in this quick, easy and very yummy recipe. You won’t regret it.
I made a loaf similar to this which you can find here but this has oil instead of butter and for muffins rather than loaf cake.

Prep: 10 mins
Cooking time: 25 mins

225g plain flour
100g caster sugar
1 tbsp baking powder
1/2 tsp salt
85g chocolate chips
1 egg
4 tbsps vegetable oil
4 tbsps milk
250g mashed bananas

Batter mixture


  1. Place flour, sugar, baking powder, salt and chocolate chips into a large bowl. Mix thoroughly and make a well in the centre
  2. Beat the egg, oil, milk and bananas together. Pour mixture into the flour well. Stir only to moisten mixture. Batter will be a bit lumpy. Fill 12 muffin cases 3/4 full
  3. Bake at 200C/Gas Mark 6 for 20-25 minutes
