Recipe of the month | Easy Risotto

One of my favourite recipes that I was taught at school was risotto. I felt like you had really accomplished a meal when you had finished it! It does take a lot of effort if you do it the ‘proper’ way i.e standing over the stove and topping up the stock until it absorbs it all *yawn*

So I concocted my own ‘cheats risotto’ which is much quicker and easier to do. 
For the meat you can use beef or lamb mince, chicken, turkey, pork anything that you like really! In this I use lean beef mince. 
Ingredients  (for 4 people)
400g mince 
1 onion
1 red pepper
2 cloves garlic
100g mushrooms
Stock cube 
120g rice (risotto, basmatic, long grain whatever works)
  1. Chop up ingredients and put some water on to boil with a pinch of salt
  2. Dry fry the mince until brown, add the onion and garlic, mix well
  3. Put the rice onto boil according to packet instructions
  4. Add the mushrooms and pepper to mince mixture and mix well
  5. Make a jug of stock and add some liquid to the mince mixture to keep it moist and simmer
  6. When the rice is cooked, drain and add to the mince mixture, mix well
  7. Add some more stock if needed and let it cook together until the rice has absorbed the flavours
  8. Serve with garlic bread or salad!
That simple. Takes about 40 minutes maybe less. Its basically about taste and consistency with this. I like a slightly less sticky rice but if you want the proper risotto texture you want the rice to be quite sticky. This recipe works out to roughly 350 calories per person.
