Recipe of the month I Easy Beef Stew


This time of year is perfect for hearty meals containing meat and vegetables. Warm, comforting and good for you. What more could you ask for? I served this with mashed sweet potato.

Serves 4

Low calorie cooking spray
500g lean sirloin steak
2 onions, finely sliced
3 garlic cloves, finely sliced
2 tsp oregano
400g can chopped tomatoes
1 large cauliflower (or other vegetables)
200g sugar snap peas
200ml boiling beef stock
  1. Spray a large non-stick frying pan with the low calorie spray and place over a high heat. Fry the steak for 2 minutes on each side or brown cubed pieces of steak and put to one side.
  2. Add the onions and garlic to the pan and stir-fry for 2-3 minutes. Add the oregano, tomatoes, vegetabes and stock and cook over a medium heat for 6-8 minutes. Add the sugar snap peas and cook for 4 minutes or until the stew is thickened and rich.
  3. Cut the steak into chunks (if large piece), return to the pan with any juices and simmer for a few inutes to heat through.
  4. Serve the stew in warmed bowls and mashed potatoes
