Recipe of the Month | Low sugar M & M cookies

These are low sugar (using a substitute) and low fat but tasty and less than 100 calories per cookie.

Makes: 16 cookies Cooking time: 10-12 minutes  Calories per portion: 92

Ingredients
1/3 cup light margarine
1/3 cup brown sugar
1/3 cup Splenda (or other sweetner)
1tsp vanilla
1 egg
3/4 cup all purpose flour
1/2 tsp baking soda
1/8tsp salt
1/4 cup M&Ms

Method

  1. Light the oven to Gas Mark 4/350F
  2. Cream butter, brown sugar, Splenda and vanilla together. Mix until creamy
  3. Add egg, mixing well
  4. Add flour, baking soda and salt and mix together well
  5. Stir in M&Ms
  6. Place level tablespoons of dough on baking sheet leaving space in between each mound
  7. Bake for 10-12 minutes or until golden brown
  8. Enjoy!
