Recipe of the month | Mild chicken curry

Another quick and easy Slimming World recipe to warm those cockles on these cold days ahead. Serves 4. Syn free.

Ingredients

  • Low calorie cooking spray
  • 4 chicken breasts
  • 2cm root ginger
  • 2 garlic cloves
  • 2 tbsp curry powder
  • 400g chopped tomatoes
  • 400ml boiling chicken stock
  • 700g vegetables (carrots, swede, beans etc)
  • 100 ml low fat Creme fraiche

Method

  1.  Spray a large pan with low calorie cooking spray. Add chicken and stir fry for 3 minutes or until sealed. Add ginger, garlic and spices and stir fry for 30 seconds
  2. Add chopped tomatoes, stock and vegetables to the pan and bring to the boil. Season well, reduce to a simmer and cook for 15 minutes until everything is cooked through
  3. Add creme fraiche and mix quickly
  4. Serve hot with rice and naan bread
